Gluten Free Chocolate Cake Heaven!

There are times when a gluten free recipe conversion are so successful that you almost fool yourself that it isn’t gluten free at all 🙂

This cake has “taken the cake” over all my other recipes completely! 

Easy, simple, moist, spongy not crumbly and far to easy to gobble…

Enough said… here is the recipe so go make it!!! 🙂 (don’t be put off by the coffee… you can’t taste it but it works it’s magic!!)

Gluten Free Chocolate “Crazy” Cake

1 3/4 cup plain gluten free flour (if in NZ I used the Bakels plain GF flour)

2 cups castor suger

3/4 cup cocoa (if in NZ Homebrand cocoa is the BEST!)

2 tsp baking soda

1 tsp baking powder

1 tsp salt

2 eggs

1 cup of really strong coffee (I used two teaspoons of instant powder)

I cup of milk with 2 capfuls of vinegar (or 1 cup of buttermilk would work)

1/2 cup oil

1 generous tsp of natural vanilla essence

Turn oven onto 170 degrees. Measure all the dry ingredients into a big mixing bowl and combine completely. Add the cooled coffee to the remainder of the ingredients and mix well. Add this to the dry and mix until smooth. Grease or line two 20cm cake tins and pour in mixture. Bake for 35-45minutes. The cakes will be spongy to touch.

This cake is great just with a dusting of icing sugar but for a special occasion make up a good quantity of chocolate butter cream icing or chocolate ganache, layer the cakes and cover 🙂
